Spicy Roast Chicken with Peanuts
Ingredients :
- 1 tsp paprika
- A pinch of cayenne pepper
- A pinch of ginger powder
- Salt and pepper to taste
- 3 tbsp oil
- 3 heaped cups of shelled peanuts
- 1 kg chicken, oven-ready
- 100 gms butter
- 1 few slices of dry white bread
- 2 tsp light rum
Method :
- In a small bowl, put the paprika cayenne pepper, ginger and salt. Add the oil and beat together well.
- Put 50 gms peanuts through a small mill or work in blender.
- Add the resulting powder to the oil and spice mixture. Preheat the oven to 200 degrees C or 400 degrees F.
- Wash, drain and wipe the chicken and season the inside with salt and pepper and truss. Coat the bird all over with the spicy oil and nut mixture, place it in a roasting pan and put in the oven to cook.
- Put another 50 gms peanuts through the small mill or work in a blender and mix this powder into half of the butter. Add a little salt.
- Toast the slices of dry bread and spread them with the prepared peanut butter mixture.
- Put the remaining butter in a small frypan and when it just golden add the rest of the peanuts fry them
- Put the toast on a baking sheet(cookie) sheet in the top of the oven and cook briefly, or until the peanuts butter topping is browned and bubbling.
- When the chicken is done, pour the rum over it and set it alight.
- Arrange the chicken on a hot serving dish and sprinkle over with the fried peanuts. Arrange the baked peanut bread slices around the chicken and serve at once.
