Indian Dishes – Appetizing Malpua

Malpua is one of the milk based sweets made in India. It’s also known as swallowed fried pancakes. Malpua is famous in Bangladesh, west Bengal and Maharashtra where it is served in festivals along with other sweets. It is especially been used in the occasion of holi. Serving for four

Ingredients:
  • - 1 ½ litres milk
  • - 50 grams mawa (khoya), grated
  • - 3 tablespoons refined flour (maida)
  • - ½ teaspoon Green cardamom powder
  • - Ghee for shallow frying
For sugar syrup
  • - 2 cups sugar
  • - A few strands of saffron (kesar)
For garnishing
  • - 15-20 pistachios, chopped
Method:
  1. - Boil milk in a heavy-bottomed pan.
  2. - Reduce heat and simmer till it reduces and reach to a coating consistency.
  3. - Add mawa and mix well and reduce it to room temperature.
  4. - Reserve two tablespoons of sugar and form one-string sugar syrup with the rest of the sugar and two cups of water.
  5. - Dissolve saffron in a teaspoon of hot milk and add it to the sugar syrup.
  6. - Add refined flour, green cardamom powder and the reserved sugar to the reduced milk.
  7. - Mix well and make a batter of pouring consistency using a little milk (if required).
  8. - Heat sufficient ghee in a wide kadai. Pour a ladle full of batter to form a pancake.
  9. - Cook on slow to medium heat.
  10. - Turn it over when it starts to color slightly. When both sides are done, dip and immerse in the sugar syrup.
  11. - Garnish with pistachios and serve hot.
