Hummus is one of the Arabic dips or spread which is famous for its long history in the Middle East stretching back to antiquity.
INGREDIENTS:
- 150 grams chickpeas (kabuli chana)
- 2 cloves of garlic
- Salt according to taste
- 3 tablespoons tahini
- 4 tablespoons olive oil
- 1 tablespoon lemon juice
- ½ teaspoon red chilli powder
METHOD:
- Soak the chickpeas overnight.
- Drain them and boil in fresh water the other day till they become soft.
- Cool the peas and remove the skin
- Put them in a food processor container.
- Add garlic, salt and tahini and than blend the mixture.
- Add two tablespoons olive oil and than blend again.
- Add lemon juice and continue to blend till until the mixture becomes absolutely smooth.
- Transfer into a serving bowl and than chill it in the refrigerator.
- Just before serving it drizzle the remaining olive oil.
- Sprinkle red chilli powder n the mixture.
